This coffee comes from the Adnan Washing Station in Kebina village, Sidama, where traditional Ethiopian processing methods are used. Shade nets are employed to slow down the drying process, ensuring a controlled, even dry for a more consistent and elevated cup profile. Through a specialized preparation method, cherries are sourced from a select number of smallholder farms. The selection process is meticulous, with 90% of the cherries picked at the perfect red ripeness, 5% semi-red, and 5% slightly overripe.
