Sourced from approximately 800 smallholder farmers in the Chelbesa "kebele" of Ethiopia's Gedeb Zone, this lot is expertly processed at the Danche Station under the management of SNAP Specialty Coffee. Cultivated at an impressive average elevation of 2,200 meters above sea level, the harvest features high-quality Kurume and Wolisho varieties. Upon arrival at the station, the cherries are placed in water for careful sorting and the removal of floaters. For this fully washed lot, the cherries are depulped, subjected to a meticulous 96-hour dry fermentation, thoroughly washed, and then slowly dried on raised beds for 12 to 14 days. This dedication to high-quality processing is matched by SNAP's commitment to community education, having trained over 6,000 farmers in climate-smart agriculture and crop diversification to ensure the long-term sustainability of the region's coffee production.
