Sourced from approximately 800 smallholder farmers in the Chelbesa "kebele" of Ethiopia's Gedeb Zone, this lot is expertly processed at the Danche Station under the management of SNAP Specialty Coffee. Cultivated at an impressive average elevation of 2,200 meters above sea level, the harvest features high-quality Kurume and Wolisho varieties. Upon arrival at the station, the cherries are placed in water for careful sorting and the removal of floaters. For this natural-processed lot, the whole cherries undergo a targeted 3-day dry fermentation before being carefully sun-dried on raised beds for 16 to 21 days. This dedication to meticulous processing is matched by SNAP's commitment to community education, having trained over 6,000 farmers in climate-smart agriculture and crop diversification to ensure the long-term sustainability of the region's coffee production.
