Cultivated at an impressive average elevation of 2,200 meters above sea level, the harvest features high-quality Kurume and Wolisho varieties. Upon arrival at the station, the cherries are placed in water for careful sorting and the removal of floaters. For this natural-processed lot, the whole cherries undergo a targeted 3-day dry fermentation before being carefully sun-dried on raised beds for 16 to 21 days. This dedication to meticulous processing is matched by SNAP's commitment to community education, having trained over 6,000 farmers in climate-smart agriculture and crop diversification to ensure the long-term sustainability of the region's coffee production.
