Sourced from the lush, high-altitude terroir of Finca El Jardin in the Ojos de Agua region of Honduras, this exceptional lot is a testament to dedicated, quality-driven farming. Cultivated at elevations spanning 1,500 to 1,700 meters above sea level, this offering features the prized Pacamara variety. During the harvest, the coffee is carefully handpicked and selected before being depulped in the afternoon. It then undergoes a prolonged fermentation of 50 to 70 hours. Once fully washed, the beans are laid out on raised African beds, where the cool mountain elevation dictates a slow, deliberate drying process lasting between 15 and 30 days.
