Their cooperative spirit and commitment to quality shine through in every cup. The younger generation of farmers has brought fresh energy to the project, experimenting with fermentation techniques and sustainable practices to highlight the natural sweetness and complexity of their coffee—while also protecting their land for the future. Processing is meticulous: cherries are de-pulped and fermented slowly in cool mountain air for up to three days, then dried carefully on raised beds and patios. The result is a clean, vibrant coffee with layered sweetness, balance and hints of plum, caramel and dried fruit.
