Sourced from the La Mandarina parcel of Finca El Barejón in the Colasay district of northern Peru , this fully washed, 100% Bourbon lot is the dedicated work of producer Yonal Fernandez and his wife, Imelda Villalobos. Cultivated at an elevation of 1,750 meters above sea level , Yonal combines traditional methods with a meticulous, hands-on approach to coffee production. During harvest, the cherries are carefully handpicked and sorted before undergoing a 24-hour dry fermentation in large tanks. Following this, the coffee is pulped, washed, and slowly dried in solar dryers for 15 to 20 days. This careful attention to detail develops a clean, expressive flavor profile , yielding a vibrant cup with distinct notes of apple, juicy tangerine, and milk chocolate, all supported by a round, juicy body and bright citrusy acidity.
