Coffee here is cultivated at elevations between 1,400 and 1,750 masl , blending traditional knowledge with modern practices. During the harvest, cherries are carefully selected at peak ripeness , floated to remove defects , and undergo a wet fermentation for 24 to 28 hours. Following meticulous washing to ensure a vibrant, clean profile , the beans are laid out to dry gradually on raised beds. This careful process preserves the coffee's finest attributes , resulting in a rich cup featuring notes of cooked apple, walnuts, red grape, and dark chocolate. The profile is beautifully supported by a round, crunchy body, bright acidity, and a delightfully sweet panela finish.
