Sourced from smallholder farmers around Teraga in the Guji zone of Ethiopia, this exceptional natural lot is processed at the Raro Nensebo Drying Station under the careful direction of Ture Waji and Sookoo Coffee. The coffee is cultivated at 2,225 meters above sea level and features local heirloom varieties 74110 and 74112. To ensure pristine quality, farmers deliver their cherries at night to minimize premature fermentation. Following an extensive sorting process, the cherries are dried on raised African beds in strict 4cm layers and rotated six times daily for 21 to 28 days to prevent over-fermentation. This highly disciplined natural processing method, paired with Sookoo Coffee's dedication to community investment and sustainable agricultural education, yields a remarkably clean, fruit-forward cup highlighting complex notes of raspberry, grape and dark cherry.
